Bread of Jesus

Ingredients for 4 servings:

  • 150g (5 ounces) flour
  • 1,5 tablespoon sugar
  • 1 handful of nib sugar
  • 1 teaspoon fresh yeast
  • 2 eggs
  • 3,5 tablespoons butter
  • 3,5 tablespoons milk
  • A pinch of salt


Using a mixer fitted with the dough hook attachment, mix the flour, yeast, regular sugar (not the nibs!) and a pinch of salt.
Add a beaten egg, warm milk and knead. Incorporate the butter and knead for another 10 minutes. Cover with a clean cloth and set aside the dough for 1 hour.
Knead again, this time incorporating the nib sugar.
Roll the dough into 3 balls (1 small, 1 medium, 1 small), then place on a baking tray lined with a cooking mat, attaching them to form a loaf.
Cover and leave to rise for another hour.
Preheat the oven to 200°C (390°F).
Whisk 1 egg yolk and a dash of water. Glaze the loaf with the egg using a brush.
Bake for 30 minutes.


In Belgium, a pink sugar-figurine of Baby Jesus is placed in the center of the loaf. If you can find one, you should use it! But be sure to tell your guests the loaf was homemade, because they’ll think it was store-bought!
