Smoked Salmon and Jasmine Rice Spring Rolls


Ingredients for 4 servings:


  • 1 green apple
  • 2 avocados
  • Mint
  • 200g (6,5 ounces) smoked salmon
  • 8 rice paper wrappers
  • 150g (5 ounces) jasmine rice
  • 3 tablespoons rice vinegar
  • 3 tablespoons chili sauce
  • 1 teaspoon sugar





Preparation:


Prepare the rice as indicated on the package, then stir in the rice vinegar and sugar. Allow to cool.
Peel and chop the green apple into thin matchsticks. Finely slice the avocados.
Dip one rice paper wrapper into a bowl of lukewarm water and allow to soak for 15 seconds to soften the wrapper. Place the wrapper on a clean kitchen towel and garnish with 1 thin slice of salmon, 1 tablespoon of rice, a couple of mint leaves, apple matchsticks and avocado slices. Delicately but firmly roll. Repeat the entire operation with each wrapper.
Serve with chili sauce.
