Apricot Cheese Mousse
Ingredients for 6 dessert glasses:
Chop 6 apricots into cubes.
To prepare the orange apricot sauce, heat the diced apricots with the juice of 1 orange for 5 minutes in a small saucepan and stir.
To prepare the mousse, separate the egg whites from the yolks. Mix the yolks with the vanilla sugar, then fold in the cream cheese. Beat the egg whites until stiff peaks form, while folding in the sugar. Incorporate the egg whites into the yolk mixture, to form a mousse.
Fill the dessert glasses with the orange apricot sauce, then top with mousse. Dice the last apricot and garnish each glass with a few apricot cubes.
Keep in the refrigerator until you are ready to serve
